What if the next revolution in French baking came from San Francisco? That is the bet behind Baguette.ai, a new spot preparing to open in the Mission District, with a bold promise: to produce French-inspired breads and pastries entirely powered by artificial intelligence.
The startup, founded in 2023 by Julien Morel (former Google Brain) and Sarah Nguyen (formerly an engineer at OpenAI), has just announced a $12 million seed round, led by the fictional California fund Golden Crust Ventures, with participation from several French Tech business angels based in the Bay Area.
At the heart of the project is a proprietary model called CrumbNet™, designed to model the complex dynamics of fermentation, hydration, and gluten development.
“We treated dough as a non-linear physical system,” explains Julien Morel. “That allows us to achieve a level of precision and reproducibility that is impossible at human scale.”
Inside the bakery-lab, no visible artisanal gestures remain: robotic arms orchestrate every step of the process, from kneading to shaping. Production parameters are adjusted in real time based on local environmental data — humidity, temperature, and even San Francisco’s famous fog.
Customers will be able to customize their order through a dedicated app, adjusting features such as baking level or crumb texture. Among the products announced: an “adaptive” baguette whose fermentation evolves according to the day’s weather, a croissant calibrated down to the gram, and a reimagined version of pain au chocolat, internally dubbed “chocolatine v2.3.”
An approach that is sure to spark debate, especially among purists of the French baking tradition. But in a city where innovation and gastronomy constantly intersect, Baguette.ai may well find its audience. “What Tesla did for the automotive industry, Baguette.ai could do for baking,” says Marc Beaupain, a Palo Alto-based investor and early backer of the project.
The opening is scheduled for private beta as early as next month, by invitation only.
