Christmas tree lighting ceremonies, San Franciscans wearing Patagonia beanies, and the Santa Skivvies around the corner: the Holiday season is here. When it comes to Yule Logs, what team are you in: brown notes – indulgent chocolate or caramel – or fruity and exotic notes of mango, passionfruit or berries?

Wondering what is a Yule Logs or “Bûche de Noël”?  It’s a French tradition that started in the late 1870s. It used to be about a large wooden piece placed in the hearth; the remaining bits, those unburnt, of the log were said to bring luck and prosperity for the following year. Nowadays, we like our bûches sweet, and as a dessert: a soft sponge cake, also called a genoise, filled with buttercream or mousse, rolled into a log shape, and coated with frosting.
