Owners Stéphane Roulland and Julia Indinova revealed that the restaurant style was inspired by the Bouillon concept of simple and affordable dining in Paris.
Californian head chef, Mo Béjar, trained in French techniques, with a rich culinary background including leadership roles at Madera, Bird Dog, and Canteen, adds a distinctive California twist to the menu.
