Foie Gras is legal in California, it just needs to come from out of state!
Amateurs, be happy, the anti-foie gras ban ended a while back! Foie gras can be purchased again from the state of California but it must ship from another state or country. So never mind, here is a list of producers and online stores where you can get foie gras legally. This is the only way to consume it because resale in restaurants is still prohibited … Foie gras therefore necessarily rhymes with tasting at home.
Get it at the source !! Based on the East Coast, since 1982 Hudson Valley has been THE renowned producer that supplies restaurants and caterers in the United States. You will find the foie gras in all its forms: foie gras mousse, terrine, in raw slices to sear, the whole foie to cook yourself, and a delicious Foie Gras au Torchon. The Torchon Foie Gras is perfect and ready to eat for your Holiday dinners: it is cooked sous-vide to achieve a perfect texture and taste. You just need to plate it and dress it nicely and pair it with a sweet and spicy preserve like their Mostarda Cremona (peaches, pears, apricots, figs, plums, pineapple, and cherries).
Should you wish to cook your own foie gras, you will find magnificent deveined lobes here. Hudson Valley Foie gras is a sustainable farm whose chef likes to say “nothing must be spoiled” (everything is good in duck !!). Thus, you will also find rillettes, bone broths etc … Find everything on their Website
Goudy’s French Cuisine
At Goudy’s French Cuisine based in San Francisco Bay Area, charcuterie is a family tradition. In order to be able to legally prepare and sell foie gras, they opened a kitchen in Colorado. So for the holidays, in addition to the traditional foie gras terrine, they have also developed an inventive and festive product range: crème brûlée with foie gras, figs stuffed with foie gras (nicely called Kisses) and many other things. Take a look at their gourmet holiday basket which also includes an Opinel knife !! And while you’re there, discover their range of sausages, pâtés, rillettes, blood sausages, duck breasts which are all good reasons to celebrate.
